Cauliflower (Macaroni) and Cheese

I use the recipe above and simply substitute diced cauliflower for the pasta.  It won't taste exactly the same, but it's still absolutely delicious and will fix a craving when you can't afford to cheat and eat the macaroni. If you want to use pasta, I would recommend Barilla Protein Plus or Dreamfield pasta, or try heart of palm cut into a macaroni size.

This is a copycat of Taco Bell's and when made with Mission Carb Smart tortilla, is within reason for a meal in terms of carbs.

Pecan Pie Cheesecake

Custard Pie
I subbed in monk fruit sweetener in this pie and it was great!  I did it with a regular pie crust rolled thin, but you could use an almond flour crust or some other version if you needed to.

Lasagna - I have learned that if I will make lasagna with only 2 layers of noodle and serve modest portions with a side salad, that is still very doable for us with no sugar spike.  I call a modest portion about the size of a half a lasagna noodle, so I often bake lasagna in mini-loaf pans.  I cut my noodle in half and each serving gets one noodle divided between the two layers.
