I use the recipe above and simply substitute diced cauliflower for the pasta. It won't taste exactly the same, but it's still absolutely delicious and will fix a craving when you can't afford to cheat and eat the macaroni. If you want to use pasta, I would recommend Barilla Protein Plus or Dreamfield pasta, or try heart of palm cut into a macaroni size.
This is a copycat of Taco Bell's and when made with Mission Carb Smart tortilla, is within reason for a meal in terms of carbs.
I make this with sugar free pudding mix and my husband loves it.
